T\u00e4ss\u00e4 kohtaa saatat mietti\u00e4: &#8220;Eik\u00f6 neutraloinnissa pit\u00e4isi synty\u00e4 vett\u00e4 ja suolaa?&#8221;<\/p>\n<p>Aivan oikein. Koulussa opetetaan, ett\u00e4 neutralointi on reaktio, jossa hapon vetyionit ja em\u00e4ksen hydroksidi-ionit yhdistyv\u00e4t muodostaen vett\u00e4. Vetyionin my\u00f6t\u00e4 hajumolekyylin ominaisuudet muuttuvat, eik\u00e4 se en\u00e4\u00e4 haihdu ilmaan.<\/p>\n<p data-path-to-node=\"15\">Toisin sanoen, vaikka vett\u00e4 ei suoraan muodostuisi, jos happo ja em\u00e4s reagoivat ja kumoavat toisensa, kyseess\u00e4 on aito neutralointi. Se sekoittuu kalan hajuun ja tekee siit\u00e4 vaikeammin havaittavan.<\/span> Tieteellisesti mielenkiintoista on my\u00f6s retikan sis\u00e4lt\u00e4m\u00e4 diastaasi-entsyymi (amylaasi). Se auttaa kalan proteiinien ja riisin t\u00e4rkkelyksen pilkkomisessa, joten se on paitsi hyv\u00e4nmakuista, my\u00f6s yst\u00e4v\u00e4llist\u00e4 vatsalle.
