Aunque parezca una escena cotidiana y sencilla, all\u00ed se esconden <b>leyes cient\u00edficas asombrosas<\/b> que solemos estudiar en la escuela secundaria. Cuando la trimetilamina se disuelve en agua, el par de electrones no compartidos de su \u00e1tomo de nitr\u00f3geno &#8220;atrapa&#8221; un ion de hidr\u00f3geno (H+) de las mol\u00e9culas de agua. Quiz\u00e1s te preguntes: &#8220;\u00bfPero si es neutralizaci\u00f3n, d\u00f3nde est\u00e1 el agua y la sal que me ense\u00f1aron en el colegio?&#8221;.<\/p>\n<p>Tienes raz\u00f3n. En la escuela aprendemos que la neutralizaci\u00f3n es cuando los iones de hidr\u00f3geno de un \u00e1cido y los de hidr\u00f3xido de una base se unen para formar agua. Sin embargo, en la qu\u00edmica existe una definici\u00f3n mucho m\u00e1s amplia y fascinante.<\/p>\n<p data-path-to-node=\"5\">Si observas la estructura de la trimetilamina, ver\u00e1s que no tiene el grupo &#8220;OH&#8221;. Entonces, \u00bfpor qu\u00e9 es alcalina? La reacci\u00f3n que forma agua es solo el ejemplo m\u00e1s com\u00fan, pero la verdadera esencia de la neutralizaci\u00f3n reside en el <b>intercambio de iones de hidr\u00f3geno<\/b>: qui\u00e9n los da y qui\u00e9n los recibe.<\/p>\n<ul data-path-to-node=\"12\">\n<li>\n<p data-path-to-node=\"12,0,0\"><b>\u00c1cido:<\/b> La sustancia que &#8220;regala&#8221; iones de hidr\u00f3geno (como el jugo de lim\u00f3n).<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"12,1,0\"><b>Alcalino (Base):<\/b> La sustancia que &#8220;recibe&#8221; esos iones (como la trimetilamina).<\/p>\n<\/li>\n<\/ul>\n<p data-path-to-node=\"13\">En el caso de eliminar el olor al pescado, sucede lo siguiente:<\/p>\n<p data-path-to-node=\"14,0,0\">1. El \u00e1cido del lim\u00f3n ofrece sus iones de hidr\u00f3geno.<\/p>\n<p data-path-to-node=\"14,1,0\">2. Al recibir los iones, la estructura del olor cambia, se vuelve estable y deja de evaporarse.<\/p>\n<p data-path-to-node=\"15\">En resumen, aunque no se forme agua de la manera tradicional, si un \u00e1cido y una base reaccionan para neutralizarse, \u00a1es qu\u00edmica pura! Conocer este concepto (que se suele estudiar m\u00e1s a fondo en bachillerato) hace que lo que pasa en nuestro plato sea mucho m\u00e1s interesante. No solo estamos haciendo que la comida sepa m\u00e1s fresca, sino que estamos aplicando una <b>tecnolog\u00eda de desodorizaci\u00f3n basada en principios cient\u00edficos<\/b> mientras comemos.<\/p>\n<h2 data-path-to-node=\"15\">\u00bfPor qu\u00e9 el r\u00e1bano rallado mejora tanto el sabor?<\/h2>\n<p data-path-to-node=\"4\">Seguro que muchos han pensado: &#8220;\u00bfEl r\u00e1bano rallado (daikon oroshi) tambi\u00e9n neutraliza?&#8221;. En realidad, funciona con un mecanismo distinto. Al rallar el r\u00e1bano, sus c\u00e9lulas se rompen y liberan fibras finas. Se dice que estas fibras tienen la capacidad de &#8220;atrapar&#8221; f\u00edsicamente la <b>trimetilamina<\/b> en su superficie. A diferencia del lim\u00f3n, que cambia la naturaleza qu\u00edmica del olor, el r\u00e1bano act\u00faa como una barrera f\u00edsica que envuelve y retiene las part\u00edculas de olor.<\/p>\n<p data-path-to-node=\"6\">Adem\u00e1s, ese toque picante que surge al rallarlo proviene de una sustancia llamada <a href=\"https:\/\/es.wikipedia.org\/wiki\/Isotiocianato\"><b>isotiocianato<\/b><\/a>, que posee potentes efectos bactericidas y desodorantes. Al mezclarse con el aroma del pescado, hace que el olor sea casi imperceptible.<\/p>\n<p>Y para a\u00f1adir m\u00e1s ciencia al asunto, el r\u00e1bano contiene una enzima digestiva llamada diastasa (amilasa). Esta ayuda a digerir las prote\u00ednas del pescado y el almid\u00f3n del arroz. As\u00ed que no solo es &#8220;delicioso&#8221;, sino tambi\u00e9n &#8220;amable con el est\u00f3mago&#8221;. El r\u00e1bano act\u00faa como un asistente para esa gran planta qu\u00edmica que es el cuerpo humano.<\/p>\n<h3 data-path-to-node=\"11\">El &#8220;D\u00fao Din\u00e1mico&#8221;: \u00c1cido y R\u00e1bano<\/h3>\n<p data-path-to-node=\"12\">Poner un chorrito de sudachi sobre el r\u00e1bano rallado y a\u00f1adir un poco de salsa de soja es, cient\u00edficamente hablando, la combinaci\u00f3n perfecta:<\/p>\n<ul data-path-to-node=\"13\">\n<li>\n<p data-path-to-node=\"13,0,0\"><b>C\u00edtrico (Sudachi):<\/b> Neutraliza el olor con su acidez y evita que se evapore.<\/p>\n<\/li>\n<li>\n<p data-path-to-node=\"13,1,0\"><b>R\u00e1bano rallado:<\/b> Atrapa el olor en sus fibras y facilita la digesti\u00f3n con sus enzimas.<\/p>\n<\/li>\n<\/ul>\n<p data-path-to-node=\"14\">Es incre\u00edble pensar que nuestros antepasados, sin conocer las f\u00f3rmulas qu\u00edmicas, desarrollaron por pura experiencia un &#8220;sistema de desodorizaci\u00f3n y digesti\u00f3n&#8221; tan perfecto en la mesa. Por cierto, si despu\u00e9s de manipular pescado te huelen las manos, <a href=\"https:\/\/hyogo-nourinsuisangc.jp\/kenmin_minasama\/mame\/suisan_mame\/02\/18\/956\/\">puedes lavarlas con un poco de vinagre<\/a> para eliminar el olor usando este mismo principio. \u00a1Pru\u00e9balo!<\/p>\n<p data-path-to-node=\"15\">\u00a1Qu\u00e9 buen provecho nos ha dado la ciencia!
