En los subt\u00edtulos del programa me presentaron como tal, pero mi t\u00edtulo correcto es Entrenador Cient\u00edfico, as\u00ed que aprovecho este espacio para aclararlo (risas).<\/p>\n<h3>\u00bfPor qu\u00e9 la pasta se vuelve ramen? La clave es el poder alcalino<\/h3>\n<p> Entonces, \u00bfpor qu\u00e9 ocurre este cambio? El secreto reside en el kansui, un ingrediente tradicional de los fideos chinos que les da su elasticidad y sabor caracter\u00edsticos. El componente principal del kansui es una sustancia alcalina, como el carbonato de sodio. El gluten, la prote\u00edna del trigo, reacciona con la alcalinidad fortaleciendo sus uniones, lo que genera esa textura firme y el\u00e1stica, adem\u00e1s de un color amarillento. En resumen, solo necesitamos que el agua de la pasta sea alcalina. \u00a1Y ah\u00ed es donde entra el bicarbonato de sodio (hidrogenocarbonato de sodio)!
