Es una escena cotidiana, pero \u00bfsab\u00edas que detr\u00e1s de ella se esconde un drama molecular fascinante? Hoy vamos a descubrir el misterio de este fen\u00f3meno con un experimento muy sencillo.<\/p>\n<h3>Experimento: Mezclemos agua y aceite<\/h3>\n<p>Empecemos con algo simple. La respuesta est\u00e1 en una propiedad de la materia llamada <b>polaridad<\/b>.<\/p>\n<h3>Las mol\u00e9culas de agua son &#8220;peque\u00f1os imanes&#8221;<\/h3>\n<p>Las mol\u00e9culas de agua tienen una distribuci\u00f3n el\u00e9ctrica desigual. Tienen una parte positiva y otra negativa, funcionando casi como <b>peque\u00f1os imanes<\/b>. A esto le llamamos &#8220;tener polaridad&#8221;. Gracias a esto, las mol\u00e9culas de agua se atraen entre s\u00ed con v\u00ednculos muy fuertes llamados <b>&#8220;puentes de hidr\u00f3geno&#8221;<\/b>. Es como si estuvieran unidas en un abrazo grupal muy apretado, formando un equipo s\u00f3lido.<\/p>\n<h3>El aceite es &#8220;el\u00e9ctricamente neutro&#8221;<\/h3>\n<p>Por el contrario, las mol\u00e9culas de aceite no tienen esa diferencia de carga el\u00e9ctrica; es decir, son <b>&#8220;apolares&#8221;<\/b>.<\/p>\n<p>En qu\u00edmica existe una regla de oro: <b>&#8220;lo semejante disuelve a lo semejante&#8221;<\/b>.<\/p>\n<ul>\n<li><b>Lo polar (como el agua)<\/b> se lleva bien con otras sustancias polares.<\/li>\n<li><b>Lo apolar (como el aceite)<\/b> prefiere agruparse con otras sustancias apolares.<\/li>\n<\/ul>\n<p>Como las mol\u00e9culas de agua est\u00e1n tan fuertemente unidas entre s\u00ed por sus puentes de hidr\u00f3geno, no dejan que las mol\u00e9culas de aceite (que no tienen esa fuerza de atracci\u00f3n el\u00e9ctrica) se metan en su grupo. B\u00e1sicamente, el agua <b>excluye al aceite y lo empuja hacia afuera<\/b>. Como el aceite es menos denso (m\u00e1s ligero) que el agua, termina siendo empujado hacia arriba, formando esa capa que vemos.<\/p>\n<p>Que algo se disuelva en agua no es solo cuesti\u00f3n de mezclarse; depende totalmente de la compatibilidad de su polaridad a nivel molecular.
